4 fillets Cod fillets (4 ounces each)
Salt, to taste
Black pepper, to taste
¼ medium onion Onion, chopped
1 medium Carrot, chopped
1 medium Red bell pepper, sliced
1 stalk Celery stalk, chopped
1 clove Garlic clove, minced
2 tablespoons Fresh parsley, chopped
Fresh thyme sprigs, optional
Fresh basil, chopped, optional
Fresh ginger, minced, optional
2 teaspoons Olive oil
4 teaspoons Lemon juice
Directions
Wash your hands thoroughly with soap and clean running water.
Preheat your oven to 400°F (200°C). Cut four large rectangles of parchment paper or aluminum foil, each about 12 by 16 inches. Fold each rectangle in half to create a crease, then unfold them flat.
Place one cod fillet (4 ounces) on the center of each parchment or foil rectangle. Season lightly with salt and black pepper.
Arrange a portion of the chopped onion, carrot, red pepper, celery, and minced garlic on top of each fish fillet. Divide the fresh parsley among all four packets, and add any optional fresh thyme, basil, or ginger if desired.
Drizzle each packet with 1/2 teaspoon of olive oil and 1 teaspoon of lemon juice, distributing it evenly over the fish and vegetables.
Fold each parchment or foil rectangle in half so the two long edges meet, creating a half-moon shape. Carefully crimp and fold the three open edges inward in tight 1/4-inch folds, sealing the packet completely so no steam can escape.
Transfer the sealed packets onto a baking sheet using a spatula, arranging them so they don't touch.
Bake for 10 to 12 minutes, depending on fillet thickness, until the fish reaches an internal temperature of 145°F (63°C) when checked with an instant-read thermometer inserted through the parchment. The fish should be opaque and flake easily with a fork.
Carefully remove the baking sheet from the oven. Let packets cool for 1 minute before serving. Open each packet slowly to release the steam, and transfer contents to serving plates.
