Ingredients

1 1/2 pounds skinless chicken breast halves

1/2 cup all-purpose flour

1/4 teaspoon kosher salt

1 pinch ground black pepper

3 tablespoons finely grated Parmesan cheese

1/4 cup extra virgin olive oil

4 tablespoons butter, divided

1/2 cup low-sodium chicken stock

2 tablespoons fresh lemon juice

1/4 cup capers, drained

2 tablespoons chopped fresh parsley

Directions

  1. Place chicken breasts between plastic wrap and pound to a uniform thickness of about 1/4 inch using a meat mallet or rolling pin.

  2. In a shallow bowl, combine flour, kosher salt, black pepper, and grated Parmesan cheese.

  3. Coat each chicken breast evenly with the flour mixture on both sides, shaking off any excess.

  4. Heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat until the butter foams.

  5. Once the foam subsides, carefully place the coated chicken breasts in the hot skillet. Sear for 5-6 minutes per side until the internal temperature reaches 165°F and the coating is golden brown. Work in batches if necessary to avoid crowding the pan. Transfer cooked chicken to a plate.

  6. In the same skillet, add the remaining 2 tablespoons of butter. Pour in the chicken stock and fresh lemon juice, scraping up any browned bits from the bottom of the pan with a wooden spoon.

  7. Add the drained capers to the pan and stir to combine. Simmer the sauce for 1-2 minutes until slightly reduced.

  8. Return the chicken breasts to the skillet and gently coat them with the sauce. Simmer for 1-2 minutes to warm through.

  9. Transfer the chicken to a serving platter, spoon the sauce over the top, and garnish with fresh chopped parsley. Serve immediately.
