Ingredients

1/4 cup cornstarch

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

1 1/2 pounds boneless, skinless chicken breasts or thighs, cut into 1 1/2-inch pieces

2 tablespoons vegetable oil

1 cup fresh orange juice

2 tablespoons fresh orange zest

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/2 teaspoon red pepper flakes

Directions

  1. In a small bowl, combine the cornstarch, kosher salt, and black pepper. Toss the chicken pieces with this mixture until evenly coated.

  2. Heat the vegetable oil in a large skillet over medium-high heat. Working in batches if necessary, sear the chicken pieces for 2–3 minutes per side until lightly golden. Transfer the seared chicken to your slow cooker.

  3. Pour the fresh orange juice over the chicken. Add the orange zest, minced garlic, minced ginger, and red pepper flakes. Stir gently to combine.

  4. Cover and cook on the low setting for 4–6 hours, or on the high setting for 2–3 hours, until the chicken reaches an internal temperature of 165°F and is very tender.

  5. Stir the contents of the slow cooker and taste for seasoning. Adjust salt and pepper as desired. Serve hot, spooning the aromatic sauce over the chicken pieces.
