Ingredients
2 cups cooked chicken, cut into cubes
½ cup ranch dressing
3 tablespoons blue cheese crumbles
3 tablespoons bacon crumbles
½ cup grape tomatoes, halved
1½ tablespoons fresh basil, chopped
4 large whole grain wraps
Romaine lettuce leaves
Directions
In a medium bowl, combine the cooked chicken cubes, ranch dressing, blue cheese crumbles, bacon crumbles, halved grape tomatoes, and chopped fresh basil. Gently fold together until the chicken is evenly coated and all ingredients are distributed throughout.
Lay out each whole grain wrap on a clean surface. Line the lower half of each wrap with 2–3 overlapping romaine lettuce leaves, leaving space at the sides.
Spoon about ¾ cup of the chicken mixture onto the lettuce-lined portion of each wrap, distributing it evenly across the width.
Fold the sides of the wrap inward, then roll from the bottom up, wrapping snugly around the filling. Secure with a toothpick if desired to hold it together.
Serve immediately or wrap individually in parchment paper for easy transport and eating.
Comments
This is an honest-time recipe: assembly runs 10 minutes if you buy rotisserie chicken or use leftover cooked chicken, which you'll need since there's no cooking step listed. All ingredients are standard at Charlotte chains—Harris Teeter and Food Lion both stock blue cheese and ranch dressing reliably, and bacon and tomatoes are everywhere. At roughly $2.50 to $3.00 per serving depending on whether you spring for good blue cheese or use crumbles, it lands in reasonable weeknight territory. The wrap itself is forgiving: pile the ingredients, roll, and eat now; it doesn't reheat well, so plan to make it when you'll eat it fresh, and it works fine for family lunch or a casual dinner as long as someone isn't fussy about mixing temperatures.
