Ingredients
2 tbsp sugar
3 tbsp fresh lime juice
1 fresh hot red chile (Thai or serrano), stem removed and minced
1 large garlic clove, minced
¼ cup Vietnamese fish sauce
Directions
Remove the stem from the fresh red chile. Mince the chile finely, including the seeds if you prefer more heat, or remove the seeds for a milder sauce.
Mince the garlic clove as finely as possible.
In a small bowl, combine the sugar and fresh lime juice. Stir until the sugar dissolves completely.
Add the minced garlic and minced chile to the lime mixture and stir well to combine.
Pour in the Vietnamese fish sauce and stir until all ingredients are thoroughly blended.
Taste and adjust seasoning as desired. Let the sauce sit for 10–15 minutes to allow the flavors to meld before serving.
