Ingredients
1 cup unsalted butter, softened
1 cup brown sugar
½ cup granulated sugar
2 eggs
2 tsp vanilla extract
1¾ cups all-purpose flour
¼ cup cocoa powder
1 tsp salt
½ tsp baking soda
1 cup mint chocolate chips
Directions
Preheat your oven to 325°F. Line two large baking sheets with parchment paper and set aside.
In a medium mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy, about 2–3 minutes.
Add the eggs one at a time, beating well after each addition until fully incorporated. Stir in the vanilla extract until combined.
In a separate bowl, whisk together the flour, cocoa powder, salt, and baking soda to combine the dry ingredients evenly.
Pour the dry ingredient mixture into the wet ingredients and stir until just combined—do not overmix. Gently fold in the mint chocolate chips until evenly distributed.
Using a ¼-cup measure or cookie scoop, drop rounded portions of dough onto the prepared baking sheets, spacing them about 3 inches apart.
Bake in the preheated oven for 15–17 minutes, until the edges are lightly browned and the centers appear just set.
Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
