Prawns With Lemon, Chili, Garlic & Feta

Ingredients
2 lb Raw large prawns in shell
7 tbsp Unsalted butter
8 cloves Garlic cloves, minced
½ tsp Hot chili powder
2 Fresh lemon
7 oz Good-quality feta cheese, crumbled
¼ cup Fresh parsley or cilantro, chopped
Salt to taste
Directions
Rinse the prawns under cold water and pat them dry with paper towels. Zest the lemons and set the zest aside, then cut the lemons in half to juice them later.
Heat the butter in a large skillet over medium-high heat. Once melted and foaming, add the minced garlic and chili powder, stirring constantly for about 30 seconds until fragrant.
Add the prawns to the skillet in a single layer. Cook for 3 to 4 minutes on the first side without stirring, until they begin to turn opaque.
Flip the prawns and cook for another 3 to 4 minutes until they reach an internal temperature of 145°F at the thickest part. The shells should be bright pink and the meat opaque throughout.
Squeeze the juice from the lemons over the prawns and add the lemon zest. Toss everything together and season with salt to taste.
Transfer the prawns and sauce to a serving dish. Top with the crumbled feta cheese and scattered fresh parsley or cilantro. Serve immediately while hot.
