2 cups Instant white rice
2 cans (10.5 oz each) Condensed cream of chicken soup
2 cups Low-sodium chicken broth
2 large (about 2 pounds total) Boneless, skinless chicken breasts
2 teaspoons All-purpose seasoning blend
1 packet (1 oz) Onion soup mix
Kosher salt
Freshly ground black pepper
Fresh parsley, chopped (optional garnish)
Directions
Preheat your oven to 350°F (175°C). Lightly coat a 9×13-inch baking dish with cooking spray.
Spread the instant rice evenly across the bottom of the prepared baking dish.
In a large bowl, whisk together the cream of chicken soup and low-sodium chicken broth until smooth and well combined.
Pour the soup and broth mixture evenly over the rice, stirring gently to combine and ensure the rice is moistened.
Pat the chicken breasts dry with paper towels. Season both sides of each breast with the all-purpose seasoning blend, onion soup mix, kosher salt, and black pepper to taste.
Arrange the seasoned chicken breasts on top of the rice mixture, spacing them apart. Do not stir or combine—the chicken will rest on top.
Cover the baking dish tightly with aluminum foil. Place in the preheated oven.
Bake for 1 hour and 15 minutes to 1 hour and 30 minutes without opening the oven door. The chicken is ready when an instant-read thermometer inserted into the thickest part of the largest breast reads 165°F (74°C), and the rice has absorbed all the liquid.
Remove from the oven and let rest for 5 minutes before serving. The chicken will be tender and juicy, and the rice will be fully cooked and infused with flavor.
Garnish with fresh chopped parsley if desired, and serve warm.
