Frozen Mint Lemonade Slush

Ingredients
8 cups water
2½ cups granulated sugar
12 ounce can frozen lemonade concentrate
6 to 8 sprigs fresh mint sprigs
2 liters chilled ginger ale
Directions
Pour 8 cups of water into a 4-quart saucepan and bring to a boil over high heat. Add the granulated sugar and stir constantly for 1-2 minutes until the sugar is completely dissolved and the mixture is clear.
Remove the saucepan from the heat and immediately stir in the frozen lemonade concentrate until fully incorporated.
Add the fresh mint sprigs to the warm lemonade mixture, then cover the saucepan with a lid.
Let the mixture steep for 10-15 minutes to infuse the mint flavor. Uncover the pan, remove and discard the mint sprigs, and stir the mixture well.
Allow the lemonade to cool to room temperature, then pour it into a freezer-safe container with a lid. Freeze for at least 12 hours until the mixture is firm and slushy.
About 30 minutes to 1 hour before serving, remove the frozen lemonade from the freezer. Using a large spoon, scrape across the surface to break it into a granita-like texture.
Fill serving glasses about halfway to two-thirds full with the frozen lemonade slush. Top each glass with chilled ginger ale and serve immediately. Garnish with a fresh mint leaf if desired.
