Ingredients

1 cup crushed pineapple, canned, juice packed

1 cup low-fat fruit yogurt (8 ounces)

6 fluid ounces frozen orange juice concentrate, thawed

4 wooden popsicle sticks

4 paper cups (5 to 8 ounce size)

Directions

  1. Wash your hands thoroughly with soap and warm water before beginning.

  2. In a medium bowl, combine the crushed pineapple with its juice, the low-fat fruit yogurt, and the thawed orange juice concentrate. Stir well until all ingredients are evenly blended.

  3. Divide the fruit mixture equally among the 4 paper cups, filling each about three-quarters full.

  4. Place the cups in the freezer and allow them to freeze for approximately 60 minutes, or until the mixture reaches a slushy consistency.

  5. Remove the cups from the freezer and carefully insert one wooden popsicle stick into the center of each cup, pushing it about halfway down into the slushy mixture.

  6. Return the cups to the freezer and continue freezing for at least 4 hours, or until the pops are completely solid and hard.

  7. When ready to serve, gently peel away the paper cup from around each frozen fruit pop and enjoy immediately.
