1 can (15 ounce) sliced peaches in juice, undrained
1 large egg
1/3 cup granulated sugar
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon softened margarine
Directions
Preheat your oven to 375°F. Wash your hands thoroughly with soap and warm water, then open the can of peaches.
Pour the peaches and all their juice into a 9-inch square casserole dish or similar baking vessel.
Place the casserole dish on the stovetop over medium heat. Warm the peaches and juice, stirring occasionally, until the mixture is bubbling around the edges.
While the peaches heat, crack the egg into a small bowl and beat it lightly with a fork until just combined.
In a separate mixing bowl, combine the beaten egg, sugar, flour, baking powder, salt, and softened margarine. Stir until the mixture forms a thick, batter-like consistency with a few small lumps remaining.
Carefully remove the hot casserole dish from the stovetop using pot holders. Drop spoonfuls of the batter evenly over the hot, bubbling peaches—do not stir the batter in; let the spoonfuls sit on the surface.
Place the casserole dish in the preheated 375°F oven. Bake for 30 to 40 minutes, until the batter topping is golden brown and a wooden toothpick inserted into the thickest part of the topping comes out clean.
Remove from the oven using pot holders and let cool for a few minutes before serving warm.
