Ingredients
1 pound jumbo shrimp, peeled and deveined
4 garlic cloves, finely grated
2 tablespoons fresh parsley, finely chopped
2 tablespoons fresh cilantro, finely chopped
3 tablespoons extra-virgin olive oil, plus more for drizzling
1 teaspoon kosher salt
1/2 teaspoon crushed red pepper flakes
1 small ciabatta loaf, halved crosswise
Flaky sea salt, for serving
Directions
Preheat your grill to medium-high heat, allowing it to reach about 400°F. If using a grill pan on the stovetop, heat it over medium-high heat until it is hot and lightly smoking.
In a medium bowl, combine the grated garlic, chopped parsley, chopped cilantro, 3 tablespoons of olive oil, kosher salt, and red pepper flakes. Mix until well combined.
Add the peeled and deveined shrimp to the garlic-herb mixture and toss gently until all the shrimp are evenly coated. Set aside.
Place the ciabatta loaf halves cut-side down on the preheated grill. Grill for 2–3 minutes until the cut sides are lightly charred and crispy. Remove from the grill and set aside on a cutting board.
Place the marinated shrimp directly on the grill grates, arranging them in a single layer. Grill for 2–3 minutes per side, until the shrimp are opaque and have reached an internal temperature of 145°F. Do not overcook.
Transfer the grilled shrimp to a serving platter. Drizzle the garlic bread with additional olive oil and finish with a light sprinkle of flaky sea salt. Serve the shrimp alongside the herby garlic bread immediately.
