Ingredients
1 unbaked 9-inch pie shell
¾ cup brown sugar
2 teaspoons ground cinnamon
1 teaspoon ground ginger
½ teaspoon ground nutmeg
1¾ cups pumpkin puree
2 large eggs, beaten
1 can (12 oz.) evaporated milk
Directions
Preheat your oven to 425°F. Prepare an unbaked 9-inch pie shell and set aside.
In a large bowl, whisk together the brown sugar, cinnamon, ginger, and nutmeg until well combined.
Stir the pumpkin puree and beaten eggs into the spice mixture until smooth and fully incorporated.
Gradually pour the evaporated milk into the pumpkin mixture, stirring constantly until the custard filling is creamy and uniform.
Pour the filling into the unbaked pie shell, distributing it evenly.
Bake at 425°F for 15 minutes, then reduce the oven temperature to 350°F.
Continue baking for 40 to 50 minutes, until a knife inserted in the center of the pie comes out clean, indicating the custard is fully set.
Remove the pie from the oven and allow it to cool completely on a wire rack before slicing and serving.
