1 stick unsalted butter

2 ounces unsweetened chocolate, chopped

½ cup bittersweet or semisweet chocolate, chopped

3 tablespoons cocoa powder

1¼ cups sugar

3 large eggs

2 teaspoons vanilla extract

3 tablespoons strong brewed coffee or espresso

½ teaspoon salt

1 cup all-purpose flour

15-20 Oreo cookies, crushed

Directions

  1. Preheat your oven to 350°F. Line an 8×8 inch baking pan with aluminum foil, pressing it firmly into all corners and folding the excess over the edges to create handles for easy removal.

  2. Combine the unsalted butter, unsweetened chocolate, bittersweet chocolate, and cocoa powder in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until completely melted and smooth. Remove from heat and let cool for a few minutes.

  3. In a separate bowl, whisk together the sugar, eggs, vanilla extract, brewed coffee, and salt for about 15 seconds until well combined.

  4. Pour the cooled chocolate mixture into the egg mixture and stir until fully incorporated.

  5. Add the flour and stir until no white streaks remain and the batter is uniform.

  6. Fold in the crushed Oreo cookies until evenly distributed throughout the batter.

  7. Pour the batter into your prepared pan and smooth the top. Arrange whole Oreo cookies on top, pressing them gently into the batter.

  8. Bake for approximately 30 minutes. The brownies are done when a toothpick inserted in the center comes out with a few fudgy crumbs attached—do not overbake, as the edges can become dry.

  9. Allow the brownies to cool completely in the pan before cutting into 8 squares and serving. The cooling time allows the texture to set properly for clean cuts.
