Ingredients
6 large red potatoes, peeled and cut into medium chunks
1 teaspoon salt
1 cup caramelized onion
1 cup buttermilk, warmed
2 tablespoons fresh dill, chopped
Directions
Fill a large pot with water and add salt. Bring to a boil over high heat. Add the potato chunks and cook until they are very tender when pierced with a fork, approximately 15–20 minutes.
Drain the potatoes thoroughly in a colander and return them to the hot pot.
Place the pot over low heat for 2–3 minutes, stirring occasionally, to evaporate any excess moisture.
Remove the pot from the heat and begin mashing the potatoes with a potato masher, leaving them slightly chunky rather than completely smooth.
Add the caramelized onions, salt, warmed buttermilk, and fresh dill to the mashed potatoes.
Fold and stir the mixture gently until all ingredients are evenly distributed and well incorporated. Serve warm.
