Ingredients

1 lb raw Italian sausage, removed from casings

¾ cup IPA beer, divided

½ tsp red pepper flakes

¼ tsp salt

2 Tbs olive oil

1 cup sour cream

2 tsp sriracha

¼ cup fresh cilantro, chopped

8-10 dinner rolls, split

Green leaf lettuce

Directions

  1. In a medium bowl, combine the raw Italian sausage with 3 tablespoons of the IPA beer, red pepper flakes, and salt. Mix gently until just incorporated, being careful not to overwork the meat. Form the mixture into 8 small patties, each about 2 inches wide and ½ inch tall.

  2. Heat the olive oil in a large skillet over medium-high heat. Place the sausage patties in the pan and cook on the first side for about 2 minutes, until golden brown. Flip the patties carefully.

  3. Pour the remaining ½ cup of IPA beer into the pan around the patties. Reduce heat to medium and simmer for about 6 more minutes, until the sausage patties are cooked through and reach an internal temperature of 160°F.

  4. While the patties cook, whisk together the sour cream, chopped cilantro, and sriracha in a small bowl until well combined.

  5. Toast the dinner rolls lightly if desired. Place one cooked sausage patty on each roll, then top with a generous dollop of the sriracha sour cream and a leaf or two of fresh green lettuce. Serve immediately.
