4 tablespoons olive oil

1 medium medium zucchini, diced

1 medium medium summer squash, diced

1 yellow bell pepper, diced

½ small red onion, chopped

to taste kosher salt

to taste black pepper

3 tablespoons red wine vinegar

1 tablespoon fresh flat-leaf parsley, chopped

1 tablespoon fresh basil, chopped

4 3- to 4-ounce fillets skinless catfish fillets

Directions

  1. Prepare the salsa by combining the diced zucchini, summer squash, yellow bell pepper, and chopped red onion in a medium bowl. Season with kosher salt and black pepper to taste.

  2. Add the red wine vinegar to the vegetable mixture and stir gently to combine. Fold in the chopped parsley and basil until evenly distributed. Set the salsa aside at room temperature.

  3. Pat the catfish fillets dry with a clean kitchen towel. Season both sides generously with kosher salt and black pepper.

  4. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering. Once hot, carefully place half of the catfish fillets in the skillet, being careful not to overcrowd the pan.

  5. Cook the first batch of fillets for 4 to 5 minutes per side, until the fish is opaque and flakes easily with a fork, reaching an internal temperature of 145°F. Transfer to a warm plate and tent with foil.

  6. Add the remaining 2 tablespoons of olive oil to the skillet and repeat the cooking process with the second batch of catfish fillets, cooking for 4 to 5 minutes per side until they reach 145°F internal temperature.

  7. Divide the cooked catfish fillets among serving plates and spoon the fresh vegetable salsa generously over the top. Serve immediately while the fish is warm.
