Ingredients
1 lb arctic char fillet
3 tbsp fresh dill, minced
2 cloves garlic, minced
1 tsp kosher salt
1/2 tsp black pepper
1 lemon, quartered
Directions
Preheat your oven to 375°F. Line a baking sheet with nonstick aluminum foil to prevent sticking and simplify cleanup.
Place the arctic char fillet skin-side down on the prepared baking sheet.
In a small bowl, combine the minced fresh dill, minced garlic, kosher salt, and black pepper. Mix until evenly blended.
Spread the herb and garlic mixture evenly over the top surface of the fillet (the exposed flesh), patting gently so the seasonings adhere.
Bake in the preheated oven for 15 to 20 minutes, until the fish flakes easily with a fork and the internal temperature reaches 145°F at the thickest point.
Remove from the oven and cut the fillet into four equal portions. Serve warm with fresh lemon wedges on the side.
Comments
Arctic char is a special-order item at most Charlotte chains—Food Lion and Harris Teeter carry it occasionally, but you'll likely need a dedicated stop at a seafood counter or specialty grocer, making this a weekend project rather than a weeknight reach. The other ingredients (dill, garlic, lemon, salt, pepper) are standard grocery staples, keeping the rest of the shop quick. At roughly $18–24 per pound for arctic char, the cost per serving lands around $5–6 before sides, which is reasonable for a restaurant-quality protein but not budget-friendly. The 25-minute stated time is honest for oven time and plating, but account for 5–10 extra minutes if you need to trim and season the fish, making it closer to 30–35 total; the recipe does not reheat well, so this is a same-night dish best served immediately.
