German Pancakes with Apples

Ingredients
1 cup whole milk
1 cup all-purpose flour
6 large eggs
1/4 teaspoon salt
6 tablespoons butter
1 to 2 medium apples, peeled, cored, and thinly sliced
1 tablespoon granulated sugar
1 1/2 teaspoons ground cinnamon, divided
1 teaspoon fresh lemon juice
2 tablespoons brown sugar
Directions
Preheat oven to 450°F and position the oven rack to the lower third. If you have a smaller oven, lower the rack further to allow the pancake room to rise.
In a medium mixing bowl, combine the milk, flour, eggs, and salt. Stir until just combined—do not overmix. The batter should be relatively smooth but a few small lumps are acceptable.
While the oven preheats, prepare the apples. Place the thinly sliced apples in a separate bowl and toss with the granulated sugar, 1/2 teaspoon of the cinnamon, and the lemon juice. Let sit for a few minutes.
In a small bowl, combine the brown sugar with the remaining 1 teaspoon of cinnamon. Set aside.
Place 6 tablespoons of butter in a 13×9 inch baking pan or similar sized ovenproof skillet. Place the pan in the oven and let the butter melt completely and become hot and sizzling, about 3 to 5 minutes.
Carefully remove the hot pan from the oven. Spread about three-quarters of the seasoned apple slices in an even layer across the bottom of the hot pan.
Slowly and carefully pour the batter over the apples, allowing it to settle evenly. Arrange the remaining apple slices sparingly over the top of the batter.
Sprinkle the cinnamon-brown sugar mixture evenly over the top of the pancake.
Return the pan to the oven and bake for 25 minutes, until the pancake is golden brown, puffed, and the eggs have set (internal temperature should reach 160°F when checked with a thermometer).
Remove from the oven and serve immediately while hot. Cut into pieces and enjoy with your preferred toppings such as maple syrup, powdered sugar, or whipped cream.
