Soba Salad With Seaweed, Cucumbers, and Asparagus

Ingredients
1 pound asparagus, woody ends trimmed
1/2 ounce dried wakame seaweed
300 grams dried soba noodles
2 tablespoons soy sauce
1 tablespoon toasted sesame oil
1/4 cup fresh lemon juice
2 tablespoons canola oil
1 (1 1/2-inch) knob fresh ginger, peeled and grated
1 large English cucumber, quartered lengthwise and thinly sliced
2 tablespoons toasted sesame seeds, plus more for garnish
2 scallions, white and light green parts thinly sliced
Kosher salt to taste
Directions
Bring a large pot of water to a boil. Add the soba noodles and cook according to package directions until tender. Drain in a colander and rinse under cold running water until completely cooled. Set aside.
While the noodles cook, bring a separate pot of salted water to a boil. Add the trimmed asparagus and cook for 3-4 minutes until just tender-crisp. Drain and transfer to a cutting board. Once cool enough to handle, cut the asparagus into 2-inch pieces.
Place the dried wakame seaweed in a small bowl and cover with cold water. Let it soak for 5 minutes until softened and expanded. Drain well in a fine-mesh strainer, pressing gently to remove excess water.
In a large bowl, whisk together the soy sauce, toasted sesame oil, lemon juice, canola oil, and grated ginger until well combined. Taste and adjust seasoning with kosher salt as needed.
Add the cooled soba noodles, cooked asparagus, rehydrated wakame, cucumber slices, and toasted sesame seeds to the dressing. Toss gently until all ingredients are evenly coated.
Divide the salad among four serving bowls or plates. Garnish with sliced scallions and additional sesame seeds. Serve immediately at room temperature or chilled.
