Ingredients
1 3½-pound bird One 3½-pound free-range chicken, visible fat removed
1 reserved Chicken gizzard and neck (reserved from chicken)
12 cups Water
¼ cup Salt
8 whole Dates, pitted
2 tablespoons Boxthorn seeds (optional)
to taste Soy sauce, for serving
Directions
Rinse the whole chicken thoroughly under cold water and pat dry with paper towels. Remove any remaining visible fat from inside and outside the bird. Reserve the gizzard and neck.
In a large pot, bring 12 cups of water to a boil over high heat. Add the salt and stir until dissolved completely.
Carefully lower the whole chicken, gizzard, and neck into the boiling salted water. Return the water to a boil, then immediately reduce the heat to low. Skim off any foam that rises to the surface.
Add the pitted dates and boxthorn seeds (if using) to the pot. Maintain a gentle simmer with the lid partially covered, allowing the chicken to cook without boiling vigorously.
Cook for approximately 75 minutes, until the chicken reaches an internal temperature of 165°F when measured at the thickest part of the thigh without touching bone. The meat should be very tender.
Remove the pot from heat. Carefully transfer the cooked chicken to a cutting board, reserving the broth. Let the chicken rest for 5 minutes before carving.
Carve the chicken into serving pieces and arrange on a platter. Ladle some of the warm broth with dates and boxthorn seeds over the chicken, or serve the broth alongside for dipping.
Serve the chicken pieces with soy sauce on the side for individual dipping. Distribute portions among 10 servings, ensuring each guest receives chicken and some of the flavorful broth.
