Ingredients
1 bag frozen waffle fries
4 strips bacon, cooked until crisp
2 cups shredded Colby & Monterey Jack cheese
¼ cup sour cream
¼ cup sliced green onions
Directions
Cook the waffle fries according to package directions until they are golden and crispy. While the fries cook, cook the bacon strips in a skillet over medium-high heat until crisp, about 8–10 minutes. Transfer to a paper towel to cool, then crumble into bite-sized pieces.
Arrange half of the cooked waffle fries on a microwave-safe plate or baking sheet. Sprinkle half of the crumbled bacon pieces over the fries, then top with 1 cup of the shredded cheese.
Layer the remaining waffle fries on top, followed by the remaining bacon pieces and the remaining 1 cup of cheese.
Microwave on high for 2–3 minutes, or return to a 350°F oven for 5–7 minutes, until the cheese is completely melted and bubbly.
Remove from heat and let cool for 1 minute. Top with sour cream and sliced green onions. Serve immediately while warm.
