Ingredients
1 tbsp olive oil
½ cup onion, chopped
2 clove garlic cloves, minced
1 pint grape tomatoes, halved
2 cup fresh spinach
1 whole yellow bell pepper, cubed
3 tbsp balsamic vinegar
4 whole Portobello mushroom caps, stems removed
2 cup shredded mozzarella cheese
salt
black pepper
Directions
Preheat your oven to 400°F.
Heat a medium sauté pan over medium-high heat.
Add the olive oil and chopped onions to the pan. Sauté for 2 to 3 minutes, stirring occasionally, until the onions become translucent.
Add the minced garlic to the pan and sauté for 30 seconds until fragrant. Then add the halved grape tomatoes and sauté for 3 to 4 minutes, stirring occasionally, until the tomatoes begin to soften and burst.
Add the fresh spinach and cubed yellow bell pepper to the pan.
Sauté for 2 to 3 minutes, stirring gently, until the spinach is completely wilted and the peppers are tender.
Pour in the balsamic vinegar and sauté for 2 to 3 minutes, stirring to combine all the flavors. Season with salt and pepper to taste. Remove the pan from heat and set the vegetable mixture aside.
Arrange the Portobello mushroom caps on a baking sheet with the undersides facing up. Remove and discard the gills if desired. Divide the shredded mozzarella cheese evenly among the mushroom caps, placing about ½ cup in each cap.
Top each cheese-filled mushroom cap with an equal portion of the sautéed balsamic vegetable mixture.
Bake in the preheated oven for 10 to 12 minutes, or until the cheese is melted and bubbly and the mushrooms are tender.
Remove from the oven and serve immediately while hot.
Comments
This is a straightforward vegetable pizza that skips the dough entirely, making 23 minutes honest and achievable. Portobello caps, onion, bell pepper, tomato, spinach, and mozzarella are all stocked at every major Charlotte chain—Harris Teeter, Food Lion, Kroger, Walmart, and ALDI—so no special trip needed. At roughly $2.50 to $3.00 per serving, the cost sits in the weeknight middle, driven mainly by mozzarella and fresh mushrooms. The dish reheats reasonably well as a leftover, though the mushroom cap will soften further. It works best for a lighter dinner or for households that enjoy vegetable-forward meals; the recipe is genuinely low-fuss, with no constant attention needed once sautéing is done.
