2 tablespoons fresh basil, finely minced

⅓ cup olive oil

8 slices French baguette, sliced into 8 rounds about 3/4 inch thick

8 slices aged goat cheese, sliced into 8 rounds about 1/3 inch thick

1 cup cherry or grape tomatoes, halved

4 large handfuls mixed salad greens

Directions

  1. In a small bowl, whisk together the Dijon mustard and champagne vinegar. Add the minced fresh basil and slowly drizzle in the olive oil while whisking constantly until emulsified. Season the vinaigrette generously with salt and black pepper to taste. Set aside.

  2. Arrange the baguette slices on a baking sheet. Lightly brush both sides of each slice with olive oil.

  3. Top each oiled baguette slice with a round of aged goat cheese, centering it on each slice.

  4. Place the baking sheet under the broiler on a middle rack. Broil for 2 to 3 minutes, until the goat cheese is soft, warm, and beginning to melt slightly at the edges. Watch carefully to prevent burning. Remove from the broiler and set aside.

  5. In a large mixing bowl, combine the mixed salad greens and halved cherry tomatoes.

  6. Drizzle a portion of the basil vinaigrette over the greens and tomatoes, then toss gently to coat evenly. You may not need all of the vinaigrette.

  7. Divide the dressed salad among four serving plates or bowls. Top each serving with two warm goat cheese toasts and serve immediately while the cheese is still warm.
