Ingredients

1 pound strawberries, hulled

1/4 to 1/2 medium honeydew melon, peeled and cubed

1 lemon

1/4 cup sugar

3-4 sprigs fresh mint

Directions

  1. Wash the strawberries and remove the hulls. Cut the strawberries in half or quarters depending on size, aiming for roughly bite-sized pieces. Transfer to a large serving bowl.

  2. Cut the honeydew melon in half, scoop out the seeds, and peel away the rind. Cut the flesh into 1-inch cubes and add to the bowl with the strawberries.

  3. Zest the lemon directly over the fruit, then cut it in half and juice it. Combine the lemon juice with the sugar in a small bowl, stirring until the sugar dissolves slightly and the mixture becomes fragrant.

  4. Pour the lemon sugar mixture over the fruit and gently toss to combine, ensuring all pieces are evenly coated.

  5. Strip the mint leaves from the sprigs and tear them gently into pieces. Scatter the mint over the fruit salad and fold in gently.

  6. Let the fruit salad sit for 5-10 minutes at room temperature to allow the flavors to meld, then serve immediately or chill until ready to serve.
