2 (8-oz.) blocks cream cheese, softened
1 cup shredded cheddar cheese
1 small green bell pepper, finely chopped
4 oz. (about 1 cup) dried or chipped beef, divided
2 green onions, thinly sliced, divided
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1/4 teaspoon cayenne pepper
Salt and black pepper to taste
Directions
In a medium mixing bowl, combine the softened cream cheese and shredded cheddar cheese. Add the finely chopped green bell pepper, three-quarters of the cup of dried beef (reserve about one-quarter cup), one sliced green onion (reserve the remaining one), Worcestershire sauce, garlic powder, and cayenne pepper. Stir until all ingredients are evenly incorporated. Season the mixture with salt and black pepper to your taste.
Shape the cheese mixture into a compact ball using your hands or by gathering the mixture in plastic wrap and kneading gently. Wrap the ball tightly in plastic wrap and place it in the refrigerator for at least 2 hours to allow it to firm up completely.
While the cheese ball chills, prepare the coating: On a flat plate or shallow dish, combine the reserved dried beef (about three-quarters cup) and the remaining sliced green onion. Once the cheese ball has set and is firm, carefully unwrap it and roll it directly into the dried beef and green onion mixture, pressing gently so the coating adheres evenly to all sides.
Return the coated cheese ball to the refrigerator and chill until you are ready to serve. Present it on a serving board or platter surrounded by your choice of crackers for guests to enjoy.
