Ingredients
3 boneless, skinless chicken breasts
12 oz tomato sauce
3 oz sloppy joe seasoning mix
2 tablespoons honey
Rice or buns for serving (optional)
Directions
Place the chicken breasts on the bottom of your slow cooker.
In a bowl, whisk together the tomato sauce, honey, and sloppy joe seasoning mix until well combined.
Pour the sauce mixture over the chicken breasts. Cover the slow cooker and cook on low heat for 6 to 8 hours, until the chicken is very tender and easily shreds.
Using two forks, shred the chicken into bite-sized pieces directly in the slow cooker, stirring gently to combine with the sauce.
Serve the sloppy joe chicken over a bed of rice, noodles, or on buns if desired.
Comments
This is a genuinely cheap weeknight win: chicken breast and a packet of seasoning run $4–5 total at any Charlotte chain, and the slow cooker does all the work. The stated 370 minutes includes 6 hours of unattended cooking, so active time is really just 10 minutes of chopping and dumping—be honest about that gap if you're meal-planning. The only friction is sloppy joe seasoning mix, which some kitchens keep on hand but others don't; if you're out, you'll mix it from paprika, garlic powder, and Worcestershire instead, adding a few minutes. It reheats beautifully and feeds a family of four with rice or standard buns from any Harris Teeter, Food Lion, or Walmart. North Carolina doesn't grow the ingredients, but there's nothing seasonal to plan around.
