Ingredients
5-6 medium russet potatoes, scrubbed
1 1/2 cups heavy cream
1 teaspoon ground coriander
1 teaspoon ground nutmeg
1/2 teaspoon garlic powder
Salt and black pepper to taste
handful Handful of fresh parsley, chopped
2 cups sharp cheddar cheese, shredded
½ cup Optional: 1/2 cup crumbled turkey bacon
Directions
Preheat your oven to 400°F. Thoroughly scrub the potatoes under running water and remove any blemishes or eyes. Using a sharp knife or mandoline, slice the potatoes very thinly into uniform pieces, about 1/8 inch thick. Pat dry with paper towels.
In a large bowl, whisk together the heavy cream, ground coriander, ground nutmeg, and garlic powder until well combined. The spices should be fully dissolved into the cream.
Lightly grease a 9x13-inch baking dish with butter or cooking spray. Arrange the first layer of sliced potatoes in the bottom of the dish, slightly overlapping the slices.
Sprinkle the potato layer with salt, black pepper, and about 2/3 cup of the shredded cheddar cheese. If using turkey bacon, scatter some crumbled bacon over this layer as well.
Repeat step 3 and 4 two more times, creating three complete layers of potatoes, cheese, and seasoning, with the final layer of cheese distributed evenly on top.
Carefully pour the spiced cream mixture evenly over all the potato layers, ensuring it reaches the bottom of the dish and saturates the potatoes.
Bake uncovered in the preheated 400°F oven for 25 minutes, until the potatoes are tender when pierced with a fork and the cream has begun to bubble around the edges.
Turn the oven to broil on high and cook for 2-3 minutes, watching carefully, until the top cheese is melted, bubbly, and lightly golden brown.
Remove the dish from the oven and allow it to rest for 5 minutes to set slightly. Top with fresh chopped parsley and serve warm.
