Ingredients

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 cup unsalted butter, softened

1 1/2 cups granulated sugar

3 large eggs

2 teaspoons vanilla extract

2 cups white chocolate chips

1 cup chopped roasted macadamia nuts

Directions

  1. Preheat oven to 350°F. In a large mixing bowl, beat together softened butter and granulated sugar until the mixture is light, fluffy, and pale in color, approximately 5 minutes.

  2. Add eggs one at a time to the butter mixture, beating well after each addition to fully incorporate. Then add vanilla extract and mix until combined.

  3. In a separate bowl, whisk together all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until a cohesive dough forms.

  4. Fold white chocolate chips and chopped macadamia nuts into the dough using a spatula or wooden spoon until evenly distributed.

  5. Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.

  6. Bake in the preheated oven for 9 to 10 minutes, until the edges are just beginning to turn golden brown but the centers still appear slightly underbaked.

  7. Allow cookies to rest on the baking sheet for 5 minutes to set, then transfer to wire cooling racks and let cool completely before serving.
