Ingredients
½ pound applewood smoked bacon
1 (28-ounce) can petite diced tomatoes, drained
1 cup sugar
1 tart cooking apple (such as Granny Smith), peeled, cored, and diced
1 small sweet onion, diced
3 tablespoons apple cider vinegar
1½ teaspoons salt
¼ teaspoon ground black pepper
1 French baguette, cut into thin slices and toasted (about 30 slices)
4-6 ounces feta cheese, crumbled
Chopped fresh chives
Directions
Cook the bacon in a large skillet over medium-high heat until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate, let cool, and crumble into small pieces; set aside.
In a large pot or saucepan, combine the drained tomatoes, diced apple, diced onion, sugar, apple cider vinegar, salt, and black pepper. Bring the mixture to a boil over medium heat.
Reduce heat to medium and simmer, stirring frequently, for 12-15 minutes until the apples are very soft and the majority of the liquid has evaporated. The mixture should have a jam-like consistency.
Remove from heat and stir in the crumbled bacon. Let the jam cool for 5-10 minutes.
Arrange the toasted baguette slices on a serving platter. Top each slice with a spoonful of the cooled tomato-bacon-apple jam, then sprinkle with crumbled feta cheese and chopped fresh chives.
Serve immediately while the toasted bread is still crisp.
