Ingredients
3 pounds Yukon Gold potatoes, cut into ½-inch thick disks
¼ cup Apple cider vinegar
4 teaspoons Spicy brown mustard
½ Red onion, diced
1 teaspoon Smoked salt
¼ teaspoon Ground black pepper
¼ cup Water (reserved from boiling the potatoes)
Directions
Bring a large pot of salted water to a boil. Add the sliced Yukon Gold potatoes and cook until just tender and a fork easily pierces the thickest part, about 8-10 minutes. Drain the potatoes in a colander, reserving ¼ cup of the cooking water.
Transfer the warm drained potatoes to a large mixing bowl.
In a small bowl, whisk together the apple cider vinegar, spicy brown mustard, smoked salt, and ground black pepper until the mustard is fully dissolved.
Add the reserved potato cooking water to the vinegar mixture and stir to combine.
Pour the warm dressing over the hot potatoes and add the diced red onion.
Gently toss all ingredients together until the potatoes are evenly coated with the dressing. Serve warm or at room temperature.
Comments
This is a rare recipe that delivers on its promise: potatoes, vinegar, mustard, onion, and water are staples at every Charlotte grocery chain, with zero special trips required. At roughly $0.80 per serving, it's genuinely cheap, driven by potatoes being $0.50–0.60 per pound year-round. The stated 15 minutes is honest if you use pre-boiled potatoes or a microwave; starting from raw potatoes adds 20 minutes, which the recipe should flag. This reheats beautifully and works as a weeknight side or next-day lunch, making it a practical staple rather than a showstopper.
