Baked Fish with Angel Hair Pasta

Ingredients
2 tablespoons Extra-virgin olive oil
1 small Small onion, finely chopped
2 cloves Garlic cloves, chopped
½ cup Dry white wine
15 ounces Canned stewed tomatoes
3 tablespoons Fresh flat-leaf parsley, chopped
2 pounds Cod or haddock fillets, rinsed and patted dry

2 tablespoons Butter, cut into small pieces
½ pound Angel hair pasta, cooked until just shy of al dente
Directions
Preheat your oven to 375°F.
Heat a small skillet over medium heat and add the olive oil. Once shimmering, add the chopped onion and garlic. Cook for about 5 minutes, stirring occasionally, until the onion becomes translucent.
Pour in the dry white wine and let it simmer for about 30 seconds to slightly reduce.
Add the canned stewed tomatoes to the skillet and use a wooden spoon to gently break apart the tomato pieces as they warm through. Allow the sauce to come to a simmer for 2 to 3 minutes.
Remove the skillet from heat and stir in the fresh chopped parsley.
Pat the fish fillets dry and season both sides generously with salt and pepper.
Spoon a thin layer of the tomato sauce into the bottom of a shallow baking dish.
Arrange the seasoned fish fillets in a single layer over the sauce. Pour the remaining sauce over the top of the fish.
Bake in the preheated 375°F oven for 15 to 17 minutes. The fish is done when it is firm and opaque throughout, reaching an internal temperature of 145°F at the thickest point.
Transfer the baked fish to serving plates, spooning a few spoonfuls of sauce over each fillet.
Return the baking dish with the remaining sauce to the stovetop over medium heat. Add the butter pieces and allow them to melt into the sauce.
Add the hot cooked angel hair pasta to the butter and sauce, and gently toss until the pasta is evenly coated and absorbs the flavorful juices.
Serve the pasta alongside the fish. For an elegant presentation, you may bundle portions of pasta using a large two-pronged fork by twisting the fork in the pasta to allow it to curl up, then slide the twisted pasta onto the plate to create pasta nests.
