Ingredients

1 tablespoon vegetable oil, divided

2 large eggs, beaten

3 1/2 cups cooked brown rice

1 cup cooked diced chicken breast

1 cup frozen mixed vegetables

2 green onions, chopped

Soy sauce or hot sauce, to taste

Directions

  1. Wash your hands thoroughly with soap and warm water before beginning.

  2. Heat a large skillet or wok over medium-high heat for 1-2 minutes until hot.

  3. Add 1 teaspoon of the vegetable oil to the hot pan, then pour in the beaten eggs. Scramble them, stirring frequently, until fully cooked through with no liquid remaining, about 2-3 minutes. Transfer the scrambled eggs to a clean plate.

  4. Add the remaining 2 teaspoons of oil to the same pan and swirl to coat the surface.

  5. Add the cooked brown rice to the pan, breaking up any clumps by pressing them gently against the hot surface with your spatula. Stir-fry for 3-4 minutes, allowing the rice to become heated through and slightly separated.

  6. Stir in the cooked diced chicken breast and frozen mixed vegetables. Continue stir-frying for 2-3 minutes until the vegetables are heated through and bright in color.

  7. Add the reserved scrambled eggs back into the pan along with the chopped green onions. Toss everything together for 1 minute until evenly combined.

  8. Season to taste with soy sauce or hot sauce, stirring well to distribute the flavoring throughout.

  9. Transfer to a serving dish and serve hot immediately.

  10. Store any leftovers in an airtight container in the refrigerator within 2 hours of cooking. Consume within 3-4 days.
