Ingredients
1/3 cup lime juice
3 tablespoons sugar
6 tablespoons fish sauce
2–3 Thai chiles, thinly sliced crosswise
2 cloves garlic, finely minced
Directions
Pour the lime juice into a small bowl. Add the sugar and stir well until the sugar dissolves completely.
Add the fish sauce to the lime and sugar mixture. Stir thoroughly to combine all ingredients.
Slice the Thai chiles thinly crosswise, removing seeds if you prefer a milder sauce. Add the sliced chiles to the bowl.
Finely mince the garlic cloves and add them to the sauce. Stir everything together until well combined.
Let the sauce rest for 5 minutes at room temperature to allow the flavors to meld before serving. Taste and adjust the balance of lime, sugar, and fish sauce as desired.
