Ingredients
5 slices bacon
1 clove garlic, minced
1 pound ground pork
1 teaspoon kosher salt
¼ teaspoon freshly ground pepper
¼ teaspoon dried rubbed sage
Additional freshly ground pepper for seasoning
4 potato buns, split
2 tablespoons unsalted butter, softened
1 cup coleslaw, for topping
Directions
Add the bacon and minced garlic to a food processor. Pulse until the mixture is coarsely ground with visible bacon and garlic pieces.
In a large bowl, combine the ground pork, kosher salt, 1/4 teaspoon pepper, and dried sage. Add the bacon and garlic mixture to the bowl and gently mix together with your hands until just combined, being careful not to overwork the meat.
Divide the mixture into 4 equal portions and gently roll each into a ball. Lightly flatten each ball into a 4-inch patty about 1 inch thick. Using your thumb, make a shallow 2-inch indentation in the center of each patty—this helps prevent the burgers from bulging as they cook.
Preheat your grill to medium-high heat. Season each patty with additional freshly ground pepper on both sides.
Place the patties on the grill without moving them and cook for 5 to 6 minutes until the bottom is marked with grill lines. Flip the patties and continue grilling for 4 to 6 minutes more until the other side is marked and the patties feel firm to the touch, indicating they have reached at least 160°F internal temperature for ground pork.
While the burgers finish cooking, spread the cut sides of each potato bun with softened butter. Place the buns cut-side down on the grill to toast until golden and lightly charred, about 1 to 2 minutes.
Transfer each grilled pork patty to a toasted bun and top generously with coleslaw. Serve immediately.
Comments
This is a straightforward burger that relies on easy-to-find ingredients at any Charlotte grocery chain—ground pork, bacon, sage, and potato buns are all standard stock. The 25-minute timer is honest if you have coleslaw ready or buy it pre-made; if you're shredding cabbage from scratch, add 10 minutes. The real cost driver is the bacon and ground pork quality; expect $12–14 total for four burgers with modest sides, or about $3–3.50 per serving, which is reasonable for a homemade burger night. These hold up well as leftovers if you store the patty and bun separately and reheat gently, making them forgiving for a weeknight family meal.
