Grilled Boerewors with Spiced Pepper Relish

Ingredients
8 boerewors or spiced beef and pork grilling sausages (about 2 1/4 lb.)
1 tablespoon olive oil
8 hot dog buns, toasted
Directions
Preheat your grill to medium-high heat, about 375–400°F. If using a stovetop grill pan, heat it over medium-high heat until smoking slightly.
Pat the boerewors sausages dry with paper towels. Lightly brush them with olive oil on all sides to prevent sticking.
Place the sausages on the hot grill. Do not move them for the first 4–5 minutes to develop a golden crust on the bottom.
Turn the sausages and continue grilling, rotating occasionally, for another 20–25 minutes, until they reach an internal temperature of 160°F when measured with a meat thermometer in the thickest part. The exterior should be deeply browned and slightly charred.
Transfer the cooked sausages to a warm plate and let them rest for 3–5 minutes.
Lightly toast the hot dog buns on the grill for 1–2 minutes per side until golden and warm.
Place one sausage in each toasted bun. Serve hot with your favorite pepper relish or chakalaka on the side or spooned over the top.
