Ingredients

½ pound Fresh arugula

½ cup Grape or cherry tomatoes, washed and halved

¼ cup Extra virgin olive oil

2 tablespoons Balsamic vinegar

¼ teaspoon Kosher salt

1 Zest from one medium lemon

5 turns Freshly ground black pepper

Directions

  1. Wash and prepare the arugula, then place it in a large salad bowl. Cut the washed cherry or grape tomatoes in half and add them to the bowl with the arugula.

  2. Zest the medium lemon directly over the arugula and tomato mixture, distributing the zest evenly throughout.

  3. In a separate small bowl, whisk together the extra virgin olive oil, balsamic vinegar, kosher salt, and freshly ground black pepper until the dressing is well combined and emulsified.

  4. Just before serving, pour the prepared dressing over the arugula salad and toss gently but thoroughly until all the greens and tomatoes are well coated with the vinaigrette.

  5. Divide the salad among four plates or bowls and serve immediately while the arugula is still crisp.

Grocery List Plus Editorial Staff4.5

This is a straightforward salad with ingredients available at every Charlotte grocer—arugula, cherry tomatoes, and pantry staples run about $8–10 total, or $2–2.50 per serving. The five-minute timer is honest; there's no cooking, just tossing, and minimal knife work if you halve the tomatoes. The real limitation is that it's strictly a same-night dish and doesn't keep well dressed, making it better as a weeknight side than a meal-prep option for families juggling schedules.
