Ingredients

8 Whole wheat fajita-size tortillas

4 tablespoons Pizza sauce

1 cup Mozzarella cheese, shredded

1 package Turkey pepperoni slices

Chicken sausage, cooked and diced

Ham, diced

Black olives, sliced

Fresh pineapple tidbits

Butter, melted

Directions

  1. Preheat your waffle iron to medium-high heat. While it warms, prepare your filling ingredients: cook and dice the chicken sausage, dice the ham, slice the black olives, and have the pineapple tidbits ready.

  2. Assemble four pizza pocket pairs: spread 1 to 2 tablespoons of pizza sauce onto one tortilla, then on a second tortilla add 1/4 cup of shredded mozzarella cheese and your choice of toppings (pepperoni slices, cooked chicken sausage, ham, black olives, and pineapple tidbits). Leave a border around the edges to prevent filling from leaking during cooking.

  3. Once the waffle iron is ready, brush melted butter on both the top and bottom plates to ensure the tortillas crisp up nicely.

  4. Place the cheese and topping-loaded tortilla on the bottom plate, then place the sauce-brushed tortilla on top. Close the waffle iron lid and cook until the machine beeps, approximately 3 to 4 minutes, until the tortillas are golden and crispy.

  5. Carefully remove the waffled pizza pocket from the iron using tongs or a spatula. Let cool for 1 to 2 minutes, then cut into four triangular quarters and serve warm.

  6. Repeat with the remaining four tortilla pairs until all pizza pockets are cooked.

Waffled Pizza Pockets hit a solid weeknight sweet spot: all ingredients are standard at any Charlotte chain, total cost lands around $2.50 per serving (driven by the multiplicity of meats rather than any one pricey item), and 45 minutes is honest though the first 10 minutes are assembly and the waffle iron needs to heat. The ham-and-pineapple combination will resonate with Carolina tastes, leftovers reheat well in a regular toaster, and the dish requires minimal attention once the pockets hit the iron—just flip them. The main mild drawback is that four servings from basic tortillas is modest for a family of four with appetites, so you might need a side or find yourself making a double batch on weekends.
