Roasted Pear and Onion Stuffed Pork Loin

Ingredients
1 rolled pork loin (1.5 kg / 3.3 lbs)
2 firm pears, sliced
2 tablespoons caramelized onion
1 tablespoon salt
1½ tablespoons olive oil
Directions
Preheat your oven to 375°F (190°C). Pat the rolled pork loin dry with paper towels to ensure it will brown evenly.
Carefully unroll or slice lengthwise into the pork loin to create a cavity for the filling, being careful not to cut all the way through.
Arrange the sliced pears along the interior of the pork loin, then spread the caramelized onion over the pears to create the filling.
Re-roll or close the pork loin and secure with kitchen twine at 2-inch intervals if needed to hold the shape during cooking.
Rub the exterior of the pork loin evenly with the olive oil, then season generously all over with the salt.
Place the stuffed pork loin on a roasting pan or baking sheet and transfer to the preheated oven.
Roast for 45–55 minutes, until a meat thermometer inserted into the thickest part of the pork reaches an internal temperature of 145°F (63°C).
Remove from the oven and allow the pork loin to rest for 5–10 minutes before slicing. This helps retain the juices.
Slice the pork loin into 10 equal portions, revealing the beautiful pear and onion filling. Serve warm.
