Spinach Soba Bowl with Peanut Sauce

Ingredients
4 to 6 ounces soba noodles
2 to 3 cups fresh shredded spinach
½ bunch scallions, diced
2 tablespoons peanut butter
2 tablespoons soy sauce
1 tablespoon fresh lime juice
1 teaspoon fresh minced ginger
1 clove garlic, minced
1 teaspoon honey
¼ teaspoon red pepper flakes
Fresh cilantro, for serving
Sesame seeds, for serving
Directions
Bring a large pot of water to a boil and cook the soba noodles according to the package directions. Drain well and set aside.
While the noodles cook, place the shredded spinach and diced scallions in a large serving bowl.
Once the noodles are cooked and drained, place them on top of the spinach and scallions. Let the bowl sit for 3 to 4 minutes to allow the warm noodles to begin wilting the spinach.
In a small bowl, whisk together the peanut butter, soy sauce, lime juice, minced ginger, minced garlic, honey, and red pepper flakes until smooth and well combined. Taste the sauce and adjust seasonings as needed.
Pour the peanut sauce over the noodles and spinach, then stir gently until all ingredients are well coated and the spinach is fully incorporated.
Serve the bowl warm immediately, or refrigerate for 1 to 2 hours and serve chilled. Top with fresh cilantro and sesame seeds just before serving.
