A decadent Irish-style hot chocolate blending rich dark chocolate with the deep complexity of stout beer, Bailey's Irish Cream, and Irish whiskey. This warming adult beverage combines cocoa powder and melted dark chocolate with whole milk, creating a luxurious dessert drink perfect for cool evenings. The stout adds depth and subtle bitterness that balances the sweetness, while the liqueurs create a smooth, creamy finish.

Ingredients

1 12-ounce bottle One 12-ounce bottle stout beer

¼ cup Unsweetened cocoa powder

2 tablespoons Granulated sugar

1 pinch Kosher salt

3 cups Whole milk

8 ounces Chopped dark chocolate

4 ounces Bailey's Irish Cream

4 ounces Irish whiskey

Directions

  1. Pour the stout beer into a medium saucepan and gently warm over medium heat until steaming but not boiling, about 3–4 minutes.

  2. In a small bowl, whisk together the cocoa powder, sugar, and salt until combined.

  3. Add the cocoa mixture to the warm stout and whisk until the cocoa dissolves and no lumps remain.

  4. Pour in the milk and stir gently to combine, keeping the heat at medium to warm through without boiling.

  5. Add the chopped dark chocolate to the saucepan and continue stirring until completely melted and smooth, about 2–3 minutes.

  6. Remove from heat and stir in the Bailey's Irish Cream and Irish whiskey until well blended.

  7. Pour the hot chocolate into six mugs and serve immediately while warm.
