Ingredients

2 pounds Red potatoes, scrubbed

2 tablespoons Butter

1 tablespoon Miso paste

2 tablespoons Milk

2 teaspoons Fresh chives, minced

Directions

  1. Cut the red potatoes into even chunks. Place them in a large pot and cover with water by at least 2 inches. Bring to a boil over high heat.

  2. Once boiling, reduce the heat to medium and continue cooking for about 20 minutes, or until a fork easily pierces the largest piece.

  3. Drain the potatoes thoroughly in a colander, then return them to the pot.

  4. Add the butter and miso paste to the warm potatoes. Using a potato masher, break down the potatoes until you reach your desired texture, mashing the miso in thoroughly.

  5. Stir in the milk and minced chives, mixing until well combined.

  6. Taste and adjust seasoning by adding more miso paste if you want stronger umami flavor, or additional milk if the mixture is too thick. Serve warm.
