Ingredients

1 1/4 lb. EZ-peel shrimp (16- to 20-count)

1 tsp. Old Bay seasoning

2 ears corn, shucked

1 jalapeño, thinly sliced

1 cup light beer

2 tbsp. fresh lemon juice

Directions

  1. Preheat your grill to high heat. In a large bowl, combine the shrimp with the Old Bay seasoning and toss well to coat evenly. Tear off four 20-inch lengths of heavy-duty aluminum foil and lay them flat on two baking sheets.

  2. Cut each ear of corn into 6 equal pieces. On each foil sheet, arrange the corn pieces and sliced jalapeño on one half. Top with one-quarter of the seasoned shrimp. Carefully lift the edges of the foil and pour 1/4 cup of beer and 1/2 tablespoon of lemon juice into each packet. Fold the foil in half over the contents, then fold and crimp all edges securely to seal each packet.

  3. Place the sealed foil packets directly on the grill grates, cover the grill, and cook for 10 minutes until the shrimp are opaque and cooked through (reaching an internal temperature of 145°F). Carefully transfer each packet to a serving plate. Using scissors or a sharp knife, cut an 'X' in the center of each packet and fold back the foil triangles to open and serve.
