Ingredients

1 pound ground chicken

1/4 cup breadcrumbs

1 egg

1/2 cup fresh cilantro, finely chopped

2 tablespoons soy sauce

1 1/2 teaspoons garlic powder

1 teaspoon onion powder

1/2 teaspoon ground ginger

Salt and black pepper to taste

2 tablespoons vegetable oil

Lime wedges for serving

Directions

  1. In a large mixing bowl, combine the ground chicken, breadcrumbs, egg, fresh cilantro, soy sauce, garlic powder, onion powder, ground ginger, and a pinch of salt and pepper. Mix gently with your hands until all ingredients are evenly incorporated, being careful not to overwork the mixture.

  2. Shape the mixture into 16 meatballs of equal size, about 1 1/4 inches in diameter. Place them on a plate.

  3. Heat the vegetable oil in a large skillet over medium-high heat until shimmering.

  4. Carefully add the meatballs to the hot oil, working in batches if needed to avoid crowding. Sear them undisturbed for 2 to 3 minutes until the bottoms are golden brown.

  5. Gently roll and turn the meatballs, then continue cooking for 8 to 10 minutes more, turning occasionally, until they are cooked through and the internal temperature reaches 165°F.

  6. Transfer the cooked meatballs to a serving platter. Serve warm with lime wedges on the side for squeezing over each meatball.
