5 tablespoons shredded coconut, divided

1 2/3 cups mocha iced coffee beverage

13.5 ounce can full-fat coconut milk

Directions

  1. In a medium bowl, whisk together the mocha iced coffee and full-fat coconut milk until well combined and smooth.

  2. Place 1/2 tablespoon of shredded coconut into the bottom of each popsicle mold cavity. Carefully pour the mocha-coconut mixture into each cavity, filling to the appropriate level as indicated by your mold.

  3. Using a popsicle stick or the back of a butter knife, gently stir through each cavity to distribute the shredded coconut evenly throughout the mixture.
