Ingredients
2 slices sandwich bread
1 tablespoon butter
2 slices meltable cheese (such as American, cheddar, pepperjack, provolone, or Colby)
1/3 cup kimchi, drained, patted dry, and chopped
Directions
Pat the chopped kimchi dry with paper towels to remove excess moisture, which will help prevent the sandwich from becoming soggy.
Butter one side of each bread slice evenly, using approximately half a tablespoon per slice.
Heat a skillet or griddle over medium heat until a drop of water sizzles on contact.
Place one bread slice butter-side down on the hot skillet. Top with one cheese slice, then scatter the dried kimchi over the cheese.
Layer the second cheese slice on top of the kimchi.
Place the second bread slice on top, butter-side up.
Cook until the bottom bread slice is golden brown and crispy, about 3 to 4 minutes.
Carefully flip the sandwich and cook the other side until the bottom is golden brown and crispy, and the cheese has melted completely, about 3 to 4 minutes more.
Transfer to a plate and serve immediately while the cheese is still melted.
