Ingredients
2 cups apples, peeled, cored, and chopped
1/4 cup brown sugar, firmly packed
1 teaspoon cinnamon
2 tablespoons water
1 1/2 cups all-purpose flour
1 1/2 cups rolled oats
1 cup brown sugar, firmly packed
1 teaspoon baking powder
3/4 teaspoon salt
1 cup plus 2 tablespoons butter, cold and cut into pieces
Directions
In a medium saucepan, combine the chopped apples, 1/4 cup brown sugar, cinnamon, and water. Place the pan over medium heat, stirring occasionally, until the apples are very soft and the mixture forms a thick, jam-like consistency, approximately 8–10 minutes. Remove from heat and set aside to cool slightly.
Preheat your oven to 350°F. Lightly grease a 9-by-13-inch baking dish with butter or cooking spray.
In a large bowl, whisk together the flour, rolled oats, 1 cup brown sugar, baking powder, and salt until evenly combined.
Add the cold butter pieces to the dry mixture. Using a fork or pastry cutter, work the butter into the dry ingredients until the mixture resembles coarse breadcrumbs and is well combined.
Press half of the oat mixture firmly and evenly into the bottom of the prepared baking dish, creating an even base layer.
Spread the apple pie filling in an even layer over the oat base, leaving a small border around the edges if desired.
Sprinkle the remaining oat mixture evenly over the apple filling, pressing gently to distribute it in a relatively even layer.
Place the baking dish in the preheated oven and bake for 30–40 minutes, until the top is lightly golden brown.
Remove from the oven and allow the bars to cool completely in the baking dish before cutting into 12 squares. Serve at room temperature or slightly warm if preferred.
