Ingredients

1 pound ground dark meat turkey

2 stalks celery stalks, diced finely

4 whole green onions, diced finely

4 cloves garlic cloves, minced

2 whole large eggs, whisked

¾ cup panko bread crumbs

1 tablespoon Creole spice mix

½ teaspoon cayenne pepper

1 tablespoon Dijon mustard

¾ cup plain Greek yogurt

½ lemon fresh lemon juice

1 tablespoon green onion greens, chopped

Directions

  1. Combine the ground turkey, diced celery, diced green onions, minced garlic, whisked eggs, panko bread crumbs, 1 tablespoon Creole spice mix, cayenne pepper, Dijon mustard, and a pinch of salt and black pepper in a large mixing bowl. Gently mix with your hands until just combined, being careful not to overwork the mixture.

  2. Form the turkey mixture into 12 small patties, each about 2 inches in diameter and roughly 3/4 inch thick. Place on a parchment-lined baking sheet.

  3. Heat olive oil in a large skillet over medium-high heat until shimmering. Working in batches if needed, carefully place the turkey patties in the hot skillet, being careful not to crowd the pan.

  4. Cook the patties for 4-5 minutes on the first side without moving them, until the bottoms are golden brown. Gently flip each patty and cook for another 4-5 minutes on the second side, until the internal temperature reaches 160°F when measured with a meat thermometer in the thickest part. Transfer to a clean plate.

  5. While the patties cook, prepare the Creole yogurt sauce: in a small bowl, whisk together the Greek yogurt, fresh lemon juice, 1 teaspoon Creole spice mix, chopped green onion greens, and a pinch of salt. Taste and adjust seasonings as needed.

  6. Serve the warm turkey patties with a generous dollop of Creole yogurt sauce on the side or spooned on top. Serves 4.
