Ingredients

4 tablespoons Granulated sugar

3 tablespoons Fresh lime juice

1¼ 1/4 cup plus 1 tablespoon Green onions, thinly sliced (divided)

2 teaspoons Fish sauce

2 teaspoons Sriracha sauce

1 pound Ground beef chuck (80% lean)

1 tablespoon Fresh mint, finely chopped

1 tablespoon Fresh Thai chilis, finely chopped

½ teaspoon Kosher salt

¼ teaspoon Freshly ground black pepper

12 Thai basil leaves

12 Wooden skewers (soaked in water 30 minutes)

Directions

  1. Begin by soaking the wooden skewers in water for at least 30 minutes to prevent them from charring on the grill.

  2. In a small bowl, whisk together 3 tablespoons sugar, the fresh lime juice, 1 tablespoon sliced green onions, 1 teaspoon fish sauce, and the Sriracha until the sugar dissolves. Set the sauce aside.

  3. In a large mixing bowl, gently combine the ground beef with 1/4 cup sliced green onions, the chopped mint, chopped Thai chilis, 1 teaspoon fish sauce, 1 teaspoon sugar, kosher salt, and black pepper. Mix lightly to avoid overworking the meat.

  4. Light a full chimney of charcoal and allow it to burn until completely covered with gray ash, then distribute the hot coals evenly across the charcoal grate.

  5. Clean and oil the cooking grate thoroughly to prevent sticking.

  6. Divide the beef mixture into 12 equal portions. Shape each portion into a small log and wrap one Thai basil leaf around it. Thread the wrapped beef onto a soaked wooden skewer.

  7. Place the beef rolls on the hot grill and cook for 6 to 8 minutes, turning once halfway through cooking, until the beef reaches an internal temperature of 160°F and is slightly firm.

  8. Remove the rolls from the grill and serve immediately with the sweet chili sauce on the side for dipping.
