Ingredients

12 crunchy taco shells

1 lb ground sirloin

1 (14.5 oz) can petite diced tomatoes, drained

1 packet taco seasoning

1 cup shredded 2% cheddar cheese, divided

2 cups shredded lettuce

1 fresh tomato, diced

Directions

  1. Preheat your oven to 400°F. Stand the crunchy taco shells upright in a 9x13-inch baking dish, with the open ends facing up.

  2. Place a medium skillet over medium-high heat. Add the ground sirloin and cook for 8–10 minutes, stirring frequently with a wooden spoon to break up the meat, until it is completely cooked through with no pink remaining.

  3. Carefully drain and discard any excess grease from the cooked meat.

  4. Add the drained petite diced tomatoes and taco seasoning packet to the cooked meat. Stir well to combine and cook for 1–2 minutes until the flavors meld.

  5. Spoon the hot meat mixture evenly into each taco shell, dividing the mixture equally among all 12 shells.

  6. Sprinkle the shredded cheddar cheese over the top of each filled taco shell and place the baking dish in the preheated oven. Bake for 15–20 minutes until the cheese is melted and the shells are heated through.

  7. Remove the baking dish from the oven and top each taco with shredded lettuce and diced fresh tomato before serving.
